Situation Technomic, Inc., America's top foodservice demographic, feasibility and statistical analysis firm needed foodservice operations assistance in redefining the menu and concept of Red, Hot & Blue Memphis Pit BAR B- QUE. Findings were to be integrated into recommendations for future locations.
CHA developed new menu items, a complete trade dress and decor package, a new set of operation manuals and kitchen layout. This lead to better quality controls, better aligned menu items and greater consistency of product being built into the entire chain. Technomic now calls CHA when food and beverage operations assistance is needed.
Situation CHA was asked to evaluate The Peacock Indian Restaurant for expansion nationwide.
CHA made extensive recommendations with regards to systems, sanitation, service, vendor procurement and food and beverage reengineering. CHA has since been retained to develop an urban prototype for Peacock. The Peacock is now positioned for positive growth and expansion to develop a new Indian Cuisine with mass appeal throughout the US.
