Anheuser-Busch is the major beer distributor for a large Midwest franchise of the Ruby Tuesday restaurant chain. Ruby Tuesday looked to Anheuser-Busch to assist them in developing and promoting a larger, more profitable beverage business while maintaining the existing dining patronage levels.
Anheuser-Busch looked to CHA for extensive training of Ruby Tuesday staff throughout the Midwest franchise markets. CHA conducted an intense beverage audit which focused on service quality, alcohol sensitivity training, i.e. BASSET, TIPS. etc., and the importance of this additional revenue stream for the overall well-being of the franchise.
Situation Biaggi's Restaurant was developed as a casual dining chain for secondary markets. The Biaggis' franchise concept needed a strong initial menu offering if it were to be embraced by Middle America and to ensure the menu items would be duplicated consistency from location to location.
CHA worked with the Biaggis' founder to develop the concept on both food and wine and create an initial menu. Quality, consistency, ease-of-preparation and reduction of waste were determining factors for creating this well received, high margin menu. It served as a foundation aspect to the franchise's successful expansion. Biaggi’s restaurants in now a 20 unit chain with revenues approaching $75 Million.
